Bindi Wine Lunch at Lake House Daylesford Hosted by Winemaker Michael Dhillon Some relationships deepen with time. Ours with Bindi is one of them. For many years, we have gathered at the lake’s edge to celebrate one of Australia’s most quietly revered estates — and this year, we do so again with the same sense of occasion, and a few surprises from the cellar. Bindi needs little introduction to those who have joined us before, but its story bears repeating. Tucked into 170 hectares of the Macedon Ranges, 50 kilometres north-west of Melbourne, the Dhillon family’s estate produces just 7 hectares of wine — high density, biodynamically farmed, and obsessively tended. The philosophy has always been one of balance and purity: farming in harmony with the land, making wines that speak honestly of their place. It is an approach that has earned Bindi a place among Australia’s most celebrated producers, with James Halliday counting it among the icons and critics consistently reaching for their highest scores. Bindi continues to be shaped by Michael Dhillon — a winemaker of rare conviction whose Chardonnay and Pinot Noir are, quite simply, among the finest being made in this country. Coveted by collectors, quietly allocated, and genuinely hard to come by, these are wines that reward those who seek them out. This year, Michael will guide our guests through a hand-selected range of Bindi labels drawn from the estate cellar — favourites alongside bottles that rarely make a public appearance. It is an intimate and generous act, and one only possible through the depth of our long-standing friendship with the Dhillon family. With just 30 seats available, settle in for a long, indulgent afternoon in the Waterfront Pavilion. A multi-course chef’s menu from the Lake House kitchen will be thoughtfully paired with each wine, in a setting that feels — as it always does — perfectly made for the occasion. Stay the Weekend | Make the most of your time in Daylesford with our Cellar Series accommodation package — two nights at Lake House, breakfast each morning, and an à la carte dinner for two in the Lake House Restaurant on one evening.
